Italian Sausage Stew

Ingredients
- 8 pork sausages, the best quality you can get
- 2 tablespoons olive oil
- 2 carrots, finely chopped
- 2 celery ribs, finely chopped
- 1 onion, finely chopped
- 1 sprig fresh rosemary, chopped
- 3 garlic cloves, roughly chopped
- 175 g green lentils, rinsed
- 400 g tomatoes, chopped
- 700 ml chicken stock
Directions
- Fry the sausages in 1 tablespoon of the oil in a casserole dish until brown.
- Remove and set aside.
- Add the carrots, celery and onion to the casserole dish and cook for 10 minutes, adding the rosemary and garlic for final minute.
- Add the lentils, tomatoes and stock.
- Return the sausages to the casserole dish, bring to a boil, cover and simmer for 20 minutes.
- Remove the lid and cook for a further 10 to 15 minutes until the lentils are soft.
- Season to taste with salt and pepper.
- Serve with mashed potatoes.
