Italian Sausage and Spinach Scramble

Ingredients
- 1⁄2 cup chopped red pepper
- 4 -5 ounces frozen spinach or 1⁄2 cup fresh spinach, torn into almond-sized pieces

- 1 lb ground Italian sausage
- 1⁄4 cup onion, chopped
- 8 large eggs, lightly beaten
- 1⁄2 cup feta cheese, crumbled
Directions
- Spray frypan with non-stick spray.
- Add the sausage pieces, bell pepper, and onion. Cook, stirring, until the sausage has browned and the pepper and onion are soft, 3-4 minutes.
- Stir in the spinach and cook about 1 minute.
- Pour in eggs and season with pepper.
- Reduce heat to medium-low, sprinkle the feta cheese on top, and cook, stirring, until the eggs have just set, approximately 2 minutes.
- Serve immediately. (I also like it warmed up).
