Italian Potatoes

I had some leftover canned tomatoes & wanted to use them up somehow with potatoes, I found this recipe in a Country Kitchen potato cookbook. Show more

  1. Cook potatoes in boiling water until tender but not soft, drain.
  2. Heat oil in a saucepan and cook garlic until golden, add tomatoes, including liquid from can and oregano, simmer until thickened. Season with pepper.
  3. Arrange potatoes in a warmed serving dish & top with tomato sauce.
