Italian Pasta Salad

Ingredients
- 250 g pasta, cooked and drained
- 150 g cherry tomatoes, cut into quarters
- 50 g pine nuts, roasted
- 200 g mozzarella cheese, cut into small cubes
- 150 g rocket, washed and drained
- salt
- pepper
- 3 teaspoons pesto sauce
- 3 tablespoons balsamic vinegar
- 90 ml olive oil
- 1 garlic clove, minced
- 1 teaspoon honey
- 1 teaspoon mustard
Directions
- Mix together the pasta, tomatoes, pine nuts, mozzarella and rocket. Season with salt and pepper.
- For the salad dressing, mix together the pesto, vinegar, oil, garlic, honey and mustard until well combined.
- Pour the dressing over the salad and toss gently.
