Italian Meatballs

Yields: 30 meatballs
Ingredients
- 1 lb 85% lean ground beef, 85/15
- 1⁄2 lb ground pork
- 3 garlic cloves, peeled and finely chopped
- 6 ounces fine breadcrumbs, preferably Italian seasoned
- 1 egg, beaten
- 1⁄2 cup asiago cheese, finely shredded
- all-purpose flour
- salt
- pepper
- olive oil
Directions
- Place beef and pork into a large bowl.
- Add garlic, breadcrumbs, Asiago, and salt and pepper to taste.
- Pour beaten egg over mixture and and then gently mix with your hands until well covered/mixed.
- Form 1 1/2 in balls by gently rolling in your palms.
- Lay on cookie sheet.
- Lightly dust with all-purpose flour.
- Fry in about 1/4 in of olive oil, gently turning. Brown on all sides.
- Add to your favorite marinara sauce and simmer for thirty minutes!
