Italian Flat Beans With Pine Nuts

Ingredients
- 1 lb romano beans (green or yellow)
- 2 teaspoons extra virgin olive oil
- 1 orange bell pepper, sliced
- 1 garlic clove, minced
- orange zest, grated (1/2 an orange)
- 1⁄4 teaspoon kosher salt
- 1⁄4 teaspoon fresh ground black pepper
- 2 tablespoons pine nuts, toasted
Directions
- Steam beans until tender crisp, about 6-8 minutes.
- Meanwhile, heat oil in a skillet, over medium/high heat, and cook bell pepper, stirring frequently, until crisp tender, about 2 minutes.
- Add garlic, stirring constantly, 30 seconds.
- Remove from heat and stir in beans, orange zest; season with salt and pepper.
- Sprinkle with pine nuts and serve.
