Italian Flag Tortellini

An easy and fairly light dish that comes out white, red, and green, just like the Italian flag.

Directions

  1. Heat water to boiling. Add tortellini and spinach. Reduce heat to medium and simmer for about 3 minutes, or longer if directed on tortellini package.
  2. Drain.
  3. Mix in rest of ingredients over very low heat until warm.
  4. Serve with ground black pepper and grated parmesan to taste.
