Italian Eggplant and Ground Buffalo

Ingredients
- 1 lb ground buffalo meat
- 1 eggplant, cubed
- 1 sweet onion, cut in half, then sliced
- 1 red bell pepper, cut in half, then 1/2 inch strips
- 6 garlic cloves, minced
- 1 large tomatoes, diced
- 4 tablespoons olive oil
- 1⁄2 teaspoon dried basil
- 1⁄2 teaspoon italian seasoning
- salt
- 1⁄2 cup fresh grated parmesan cheese
Directions
- Heat oil in large pan over med-high heat
- Saute eggplant, pepper, onion until soft.
- Stir in garlic, cook 1 minute.
- Stir in buffalo, cook until almost done.
- Stir in tomatoes and seasonings and cook until meat is done.
- Spoon into bowls and sprinkle parm on top.
