Italian Brasciole

Yields: 1 roll
Ingredients
- 1 (1/2lb) round steak, cut 1 to 1/2 inches thick, pounded thin
- 1 teaspoon parmesan cheese, grated
- 1 hard-boiled egg
- 1 teaspoon parsley
- 1⁄4 cup breadcrumbs
- 1⁄2 teaspoon salt
- 1⁄8 teaspoon pepper
Directions
- Combine parsley, bread crumbs, salt and pepper.
- Sprinkle over steak.
- Place egg on top of steak and roll steak like a jelly roll.( you could also chop egg but we liked the look of whole egg when sliced when we were younger).
- Tie securely with string.
- Brown steak on all sides - add to favorite spaghetti sauce.
- Cook over slow simmer until tender -- several hours.
- Remove from sauce and before serving, untie string, slice 1 to 1 1/2 inch thick pieces.
- Serve with your favorite pasta! Much more impressive than meatballs!
