Italian Bean Soup

Ingredients
- 32 ounces vegetable broth
- 2 (15 ounce) cans great northern beans (rinsed and drained)
- 2 medium carrots (sliced)
- 1 red onion (diced)
- 2 garlic cloves (minced)
- 2 tablespoons italian seasoning
- 2 cups soymilk
- 1 teaspoon salt
- black pepper
Directions
- in large soup pot over medium-low, cook carrots, garlic and onion until starting to soften.
- add beans, Italian seasoning, vegetable broth, salt and pepper.
- Bring to boil, stirring often, boil for 5 minutes turn down heat and simmer for 20.
- Add soy milk, let soy milk warm, then serve.
