Ingredients
- 1 tomatoes
- 1 cucumber
- 1⁄4-1⁄2 red onion
- 1⁄4-1⁄2 cup lemon juice
- 1 -2 tablespoon extra virgin olive oil
- salt
- pepper
Directions
- Dice vegetables.
- Add all ingredients to a bowl.
- Mix.
- Serve as is or chill for no more than 10 minutes.
- Note: If preparing in advance DO NOT add olive oil and lemon juice until you are about to serve.
