Israeli Potato Salad

Ingredients
- 2 lbs red potatoes, unpeeled
- 1 1⁄2 cups carrots, cooked and diced
- 1 cup peas, cooked
- 1⁄4 cup chopped red onion
- 1 dill pickle, diced
- 3 tablespoons chopped parsley
- 3⁄4 cup mayonnaise
- 1 hard-boiled egg
- 1 kirby cucumber, peeled and diced
- salt and pepper
Directions
- Boil potatoes. Simmer 25 minutes. Peel and dice.
- Combine with remaining ingredients.
