Island Rice

Ingredients
- 2 1⁄2 cups water
- 1 cup uncooked long-grain rice
- 1⁄2 cup chopped dried pineapple
- 2 teaspoons butter
- 1⁄2 teaspoon grated lime rind
- 1⁄4 teaspoon salt
- 1⁄4 cup chopped fresh cilantro
- 1 tablespoon chopped green onion
- 2 1⁄2 tablespoons fresh lime juice
Directions
- Bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt).
- Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
- Remove from heat; stir in cilantro, onions, and juice.
