Irish Potatoes and Cabbage

A good mashed potatoes recipe for left over boiled dinner or leftover cole slaw. This is the first recipe I have ever posted, I hope you enjoy! Show more

Yields:

Ingredients

  • 4  tablespoons margarine or 4  tablespoons butter
  • 2  cups  leftover  Coleslaw or 2  cups cabbage
  • 34 cup milk
  • 12 teaspoon salt
  • 12 teaspoon pepper
  • 6  red potatoes (or whatever you use for mashed potatoes, even instant ones work)
  • 2  cups cooked corned beef, chopped (about 2 cups)
  • 2  ounces  shredded cheddar cheese

Directions

  1. Wash and chop up you potatoes small and boil in a large pot. Once they are tender, drain and return to pot.
  2. Mash potatoes with a potato masher. Add butter and fold in, then milk, salt and pepper.
  3. Once you get them to the consistency that you like, add in your leftover cole slaw, corned beef and cheese; mix well.
