Irish Potato Soup

This is an Irish style potato soup recipe from a family recipe with a slight update.

  1. Boil water. Peel potatoes, dice into desired sized chunks. Dice onion.
  2. Add potatoes, half of onion to boiling water. Once water reaches boiling point again, turn heat to low and allow to simmer for approximately 20 minute (until potatoes are soft.).
  3. Drain water, save it. Mash 1/2 of potatoes. Return pot to stove, add 1/2 cup drained water, remainder of onions, salt, dill, pepper, and milk. Stir well (as mashed part of potatoes will stick and burn), and allow to simmer on low for 10 minute Add diced carrot if desired.
