  1. Preheat oven to 375°F.
  2. In a large bowl, cream butter and sugar.
  3. Beat in eggs, one at a time.
  4. Stir in lemon rind and diced apples.
  5. In a small bowl, sift together flour, salt and baking powder; fold into butter mixture until well blended.
  6. Grease an 8x8x2 inch baking dish.
  7. Pour batter into prepared baking dish.
  8. Bake about 30 minutes or until golden, and cake tester, inserted in center, comes out clean.
  9. Cool, cut and serve.
  10. Nice served slightly warm with vanilla ice cream.
