Irish Croquettes : Corned Beef and Potato

This is some more of my comfort food. Reminds me of my Grandma, who was always looking for more ideas to do with Corned beef. Show more

Serves: 8

Ingredients

  • 2  cups  mashed potatoes, left overs are fine seasoned with
  •  salt, to taste,and
  •  pepper, to taste
  • 3  cups  finely chopped corned beef
  • 1  egg
  • 1  tablespoon  finely chopped parsley
  • Coating

  • 1  egg
  • 2  tablespoons milk
  •  dried breadcrumbs

Directions

  1. Combine potatoes, corned beef, egg, and seasoning.
  2. Mix well.
  3. Form into croquettes.
  4. Dip into egg and milk mixture.
  5. Roll in bread crumbs.
  6. Fry in oil heated to about 375 degrees.
  7. Enjoy.
