Irish Coffee Cream Pie

"When Irish Eyes are Smiling" was the title of the menu for this gourmet club dinner. And smile they did when they tasted this refrigerator pie.

Ingredients

• Crust

• 1  cup  chocolate cookie crumb
• 1⁄4 cup butter, melted

• Filling

• 3  cups  whipping cream
• 1⁄2 cup powdered sugar
• 1  tablespoon powdered sugar
• 4  tablespoons  Irish whiskey
• 4  tablespoons Kahlua
• 2  tablespoons hot water
• 1⁄4 cup instant coffee, dissolved in the hot water

• Garnish

•  shaved bittersweet chocolate

Directions

1. Crust: Pre heat oven to 375 F degrees.
2. Mix butter and crumbs, press into 9" pie pan, bake until set approx.
3. 8 mins.
4. Cool completely Filling:Combine all ingredients in a chilled bowl.
5. Beat on medium speed until mixture hold peaks.
6. Pour into crust and garnish.
7. Chill 4 hours or overnight.
