Irish Cabbage Quinoa Soup

Ingredients
- 4 tablespoons butter, divided
- 1 1⁄2 cups chopped onions
- 1 1⁄2 teaspoons caraway seeds, crushed
- 1⁄2 teaspoon black pepper
- 3⁄4 cup quinoa, rinsed
- 6 cups chicken broth
- 6 cups savoy cabbage, thinly sliced
- 4 ounces Canadian bacon, chopped
- salt and pepper
Directions
- In large pot, melt half the butter. Add onions, caraway seeds and pepper. Cook 5-6 minutes until onions are softened.
- Stir in quinoa and broth; bring to a boil. Reduce heat to low and simmer for 15 minutes.
- Stir in cabbage, cover and simmer, stirring, 4-5 minutes until cabbage is wilted and quinoa is tender.
- Transfer 1/3 of soup to food processor and puree until smooth. Return to soup pot and stir in bacon. Season to taste with salt and pepper.
