Iowa Corn Soup

Ingredients
- 1 cup sliced onion
- 1 tablespoon canola oil
- 2 tablespoons flour
- 3 cups corn
- 5 cups 2% low-fat milk
- 1⁄4 cup parsley, minced
- salt and pepper
Directions
- Saute onion in oil in a large saucepan until tender, about 5 minutes.
- Sprinkle with flour and cook for 1 minute.
- Stir in corn and milk. Heat to boiling, reduce heat and simmer for 5 minutes.
- Stir in parsley. Season to taste with salt and pepper.
