Indian -Spiced Pork Greek Yogurt

Ingredients

  • 1  teaspoon  coriander seed
  • 1  teaspoon cumin seed
  • 1  teaspoon  fennal  seeds
  • 14 teaspoon salt
  • 14 teaspoon pepper
  • 1  tablespoon canola oil
  • 1 (1 lb)  pork tenderloin, trimmed
  • 1  cup  grated English cucumber
  • 23 cup  plain 2%  Greek yogurt
  • 1 12 teaspoons  grated lemon rind
  • 14 teaspoon salt
  • 1  dash  ground red pepper
  • 1  garlic clove (minced)

Directions

  1. Combine coriander, cumin, fennel seeds, 1/4 teaspoon salt and 1/4 teaspoon pepper in a spice grinder, and process until finely ground.
  2. Brush canola oil over tenderloin, and rub with spice mixture.
  3. Place pork on a roasting pan and let stand at room temperature for 30 minutes.
  4. Preheat oven to 425 degrees.
  5. Roast pork at this temperature for 15 minutes or until a thermometer registers 145 degrees.
  6. Let stand 5 minutes, and slice.
  7. Squeeze moisture from 1 cup grated english cucumber.
  8. Combine cucumber, yogurt, lemon rind, 1/4 teaspoon salt, dash red pepper, and minced garlic clove.
  9. Serve with pork.
