Indian Shrimp

Ingredients
- 1 lb shrimp
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced/crushed
- 4 cups canned Italian plum tomatoes, drained well and chopped
- 2 tablespoons lemon juice, fresh
- 1⁄2 teaspoon ground coriander
- 1⁄4 teaspoon ground ginger
- 1⁄8 teaspoon cayenne pepper
- 1⁄4 teaspoon ground cumin
- parsley sprig, if desired (to garnish)
Directions
- Peel and devein shrimp.
- In large nonstick skillet, heat oil.
- Add onion and garlic, saute until softened.
- Add tomatoes, lemon juice and spices.
- Bring to boil, reduce heat, cover and simmer for 15 minutes.
- Add shrimp and cook 3-5 minutes, or until cooked through.
- Garnish with parsley if desired.
