Ina Garten's Old-Fashioned Salad

This is a simple, easy to prepare potato salad from Ina's book: "The Barefoot Contessa at Home". It's easy to make because you don't have to peel the potatoes; and it's the one she made for the 18 years that she owned the Barefoot Contessa Store. Show more

Directions

  1. Place potatoes in boiling water, then lower the heat and simmer water until potatoes are barely tender, about 15 minutes; drain potatoes and keep them warm.
  2. In a small bowl, whisk together the mayonnaise, buttermilk, Dijon and whole grain mustards, 1 teaspoon salt and 1 teaspoon pepper, set aside.
  3. When cool enough to handle, cut potatoes into salad-size pieces, into a bowl and pour enough dressing over them to moisten.
  4. Add the celery, red onion, 2 teaspoons salt and one teaspoon pepper.
  5. Toss well, cover and refrigerate for a few hours for the flavors to marry.
