Impossible Lemon Blender Pie

This is one of the easiest and most delicious quick lemon pies you'll ever eat. I first had it at my friend's, Patty, in Tucson. Show more

Yields: 1 pie

Ingredients

  • 1  large lemon
  • 1 12 cups sugar (or Splenda)
  • 4  eggs
  • 1  frozen  pie crust (8-9")

Directions

  1. Cut ends off lemon; slice into 3-4 sections and place in blender.
  2. Pulverize.
  3. Then add sugar and eggs.
  4. Blend well.
  5. Pour into 8-9 inch frozen pie crust and bake at 350F for 35-40 minutes.
  6. Top with whipped cream or topping of your choice and garnish with fresh raspberries or other berries.
