Iced Pumpkin Cookies

Ingredients
Cookies
- 2 cups shortening
- 2 eggs
- 1 teaspoon salt
- 2 teaspoons vanilla
- 4 teaspoons baking powder
- 2 cups pumpkin
- 5 cups flour
- 2 cups sugar
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
Icing
- 6 tablespoons brown sugar
- 6 tablespoons milk
- 1 lb powdered sugar
- 2 tablespoons melted butter
Directions
- Preheat oven to 350°F.
- Combine all cookie ingredients, mixing well.
- Drop by spoonfuls on greased cookie sheets.
- Bake for 12-15 minutes, or until they test done to the poke test.
- While the first batch is baking, combine the icing ingredients and mix well.
- As each batch comes out, let rest for a few minutes until set and then move to a drying rack.
- Ice while still warm.
