Iced Lemon Christmas Cookies

  1. Combine the flour, baking powder and salt in a bowl.
  2. Beat together the butter, sugar and eggs in a large bowl until well blended. Stir in lemon rind and juice. Stir in flour mixture until the dough is smooth. Wrap dough in plastic wrap Refrigerate several hours or overnight.
  3. Divide dough in half. Roll out each half of dough on a lightly floured surface to 1/8-inch thickness. Cut out using your favourite 3- or 4-inch cookie cutters. Place .5 inch apart on ungreased cookie sheets.
  4. Bake in preheated hot oven (400 degrees) for 6 minutes or until lightly golden. Remove cookies to wire racks to cool.
