Ice Box Cake

Ingredients
- 1 sponge cake, ready made
- 1 lb butter
- 2 cups icing sugar
- 4 eggs
- 250 ml heavy cream
- fresh fruit, of your choice or canned fruit
- cocoa powder (optional) or instant coffee powder (optional)
Directions
- Cut cake to fit a bowl.
- Blend butter & sugar, beat until creamed.
- Add eggs one by one.
- Add cream.
- Add coco powder or coffee powder at this point for choc OR coffee flavoured ice.
- Beat until thick & stiff.
- Put cake at bottom layer of bowl.
- Layer of icing.
- Layer of fruit.
- Layer of cake, layer of icing, layer of fruit etc.
- Finishing with top layer of cream.
- Decorate top with fruit.
- Refrigerate -- to be kept in fridge.
