Huevos Rancheros

Ingredients
- 15 ounces black beans, rinsed and drained
- 1 1⁄4 cups salsa
- 4 eggs
- 3 ounces mexican cheese, shredded
- tortilla (optional)
Directions
- In 10-inch skillet, mix black beans, salsa, and 1/4 cup water. Heat to boiling over high heat, stirring frequently.
- Break eggs, one at a time, into a custard cup and slip onto top of bean mixture. Reduce heat to med-low; cover. Simmer until white are completely set, and yolks begin to thicken, about 5 minutes.
- To serve, sprinkle bean mixture and eggs with cheese.
