Hucklebuck Cookies

Ingredients
- 3⁄4 cup Crisco
- 2 large eggs
- 3⁄4 cup cocoa
- 1 1⁄2 teaspoons vanilla
- 1 1⁄2 cups sugar
- 3 cups flour
- 3 teaspoons baking powder
- 3⁄4 teaspoon salt
- 1 1⁄2 cups milk
COOKIE FILLING
- 2 cups powdered sugar
- 1⁄8 teaspoon salt
- 1 tablespoon milk
- 3⁄4 cup butter
- 1 cup marshmallow cream
- 1 1⁄2 teaspoons vanilla extract
Directions
- cream crisco. eggs, cocoa, 1 1/2 tsps vanilla and sugar.set aside.
- In a seperate bowl, combine flour, baking powder and 3/4 tsp salt.add 1 1/2 cups milk to cocoa mixture alternating with dry ingredients.mix well after each addition until batter is smooth --
- drop by tblsful on ungreased sheet.
- bake at 400* for 7-8 minutes.
- cool on rack.
- FILLING:.
- blend together remaining ingredients and spread on one side of a cookie and top with second cookie.
- store in an airtight container.
