  1. When your recipe calls for cake flour, all you need to do is add some cornstarch and use a little less flour.
  2. For every 1 cup of flour the recipe calls for, subtract 2 tablespoons flour from the cup and replace with 2 tablespoons of cornstarch.
  3. Then mix like usual in your recipe, and you'll have a lighter flour to make cakes and cookies.
