Hot Sweet Potato Salad

Ingredients
- 1 1⁄2 lbs sweet potatoes, cubed
- 1 tablespoon sugar
- 1 tablespoon oil
- 1 teaspoon kosher salt
- 1⁄2 teaspoon red pepper flakes
- 3 slices bacon
- 1⁄2 cup red onion
- 1⁄4 cup apple jelly
- 2 tablespoons cider vinegar
- 1⁄4 cup pecans
- 2 tablespoons lime juice
- 2 tablespoons green onions
Directions
- Pre-heat oven to 425 deg.
- Toss potatoes with sugar, oil, salt and pepper.
- Roast at 425 deg. for 25-30 minute on a jelly roll pan.
- Saute bacon til crisp and add onion. Saute for 3 minute.
- Add jelly and vinegar til it melts. Remove from heat.
- Toss with bacon, pecan, lime and green onion.
- Season with salt and pepper.
