Hot Orange-Chile Glaze

Yields: 2 cups
Ingredients
- 1 tablespoon vegetable oil
- 1 yellow onion, minced
- 1 tablespoon garlic, minced
- 3 serrano chilies, diced
- 1 tablespoon coriander seed
- 2 tablespoons chili powder
- 1 tablespoon cumin
- salt and pepper
- 1⁄2 cup orange juice
- 2 tablespoons molasses
- 1⁄2 cup white vinegar
- 1⁄2 cup chicken broth
- 2 tablespoons cornstarch
- 4 tablespoons cold water
Directions
- In a heavy bottom saucepan heat oil. Saute onion 5-7 minutes.
- Add garlic and serrano chile and saute for 2 more minutes.
- Add remaining ingredients except the cornstarch and 4 tbsp water.
- Bring mixture to boil and simmer 20 minutes.
- In small bowl mix cornstarch and 4 tbsp cold water. Slowly add cornstarch mixture to glaze.
- Simmer until thickened and remove from heat.
