Hot Chicken Salad

Ingredients
- 2 cups coarsely diced chicken, preferably white meat
- 2 hard-boiled eggs, diced
- 1 cup coarsely chopped celery
- 1 tablespoon lemon juice
- 2 tablespoons chopped onions
- 2⁄3 cup mayonnaise
- 1 can cream of chicken soup
- 1 1⁄3 cups raw rice
- 1 cup cashews
Directions
- Cook rice according to package directions.
- Stir in remaining ingredients and mix well.
- Spoon into a 2 1/2 quart casserole dish.
- Cover and bake at 400° for 20-30 minutes, until heated well through into center of casserole.
