Hot Chicken or Turkey Salad

Posted in response to a request. This is my favorite dish to make with leftover turkey. (Can also use chicken.) The name says "Salad", but it's more of a casserole. Recipe has been in the family for years. Hope you try it and enjoy!

• Serves: 6

Ingredients

• 1 1⁄2 cups  Special K cereal
• 3  cups  diced  cooked turkey (or chicken)
• 1  cup  finely cut celery (2 large stalks)
• 1⁄4 cup pitted black olives, chopped
• 3  tablespoons chopped pimiento
• 3  tablespoons  finely chopped green onions
• 1⁄2 teaspoon salt
• 3⁄4 cup Miracle Whip
• 1  tablespoon  melted butter

Directions

1. Crush cereal into coarse crumbs and set aside.
2. Combine poultry, celery, olives, pimento, onions, salt and Miracle Whip, put into casserole.
3. Combine cereal with melted butter and sprinkle over casserole.
4. Bake uncovered at 400 degrees for 15 minutes.
