Hot Bolognese Rigatoni

Ingredients
- 1 lb rigatoni pasta
- 2 tablespoons olive oil
- 1 medium onion
- 1 large carrot
- 1 celery rib
- 1⁄2 green pepper
- 1⁄2 red pepper
- 2 garlic cloves
- 1⁄2 teaspoon thyme
- 1⁄4 teaspoon oregano
- 1⁄4 teaspoon basil
- 1⁄8 teaspoon salt
- 1⁄8 teaspoon pepper
- 1 pinch nutmeg
- 1⁄4 lb ground beef
- 16 ounces dam salsa
- 3 sprigs fresh basil
Directions
- Cook 1 lb. of Rigatoni Noodles.
- Heat 2 Tbsp. Olive Oil in a Large Saucepan.
- Add Mirepoix and Sauté until the onions start to become translucent, about 6 - 8 minutes.
- Mirepoix: 1 Medium Onion, 1 Large Carrot, 1 Celery Rib, ½ Green Pepper, ½ Red Pepper, 2 Garlic Cloves.
- Add Tang Seasoning: ½ tsp Thyme, ¼ tsp Oregano, ¼ tsp Basil, ⅛ tsp Salt, ⅛ tsp Pepper, pinch Nutmeg.
- Mix in ¼ lb of Ground Beef.
- Let simmer for 6 - 8 minutes, until the beef is lightly browned.
- Mix in 1 jar of DAM Salsa, (we suggest DAM Hot Salsa) ¼ cup Parmesan Cheese, and ¼ cup Cream. Then fold in precooked Rigatoni Noodles.
- Serve with a sprinkle of Parmesan and fresh Basil.
