Hot and Sour Chicken and Rice Soup

Ingredients
- 3 (14 ounce) cans chicken broth
- 1 1⁄2 cups quick-cooking rice
- 1 lb chicken breast, diced
- 1 1⁄2 teaspoons minced fresh ginger
- 1 tablespoon hot chili oil
- 1 tablespoon rice wine vinegar
- 1 bunch scallion, sliced
Directions
- Heat chicken broth, rice and 3 cups water to a boil. Add chicken to soup. Reduce heat to medium low, cover, and cook until rice is tender and chicken is cooked.
- Add ginger, chile oil, vinegar and scallions and cook 2 minutes to blend flavors.
