Horseradish Potato Salad

Ingredients
- 2 lbs small waxy potatoes, scubbed
- 1 teaspoon salt
- 2 tablespoons grated fresh horseradish
- 2 tablespoons rice vinegar
- 2 teaspoons fresh thyme
- 1⁄2 cup olive oil
- 2 stalks celery, finely chopped
- black pepper
Directions
- Place potatoes in a large saucepan and add boiling water to cover.
- Cover loosely and bring to a boil. Reduce heat and simmer for 20 minutes, or until potatoes are tender.
- Let cool until able to handle. Cut potatoes in quarters.
- In a large serving bowl, whisk together horseradish, vinegar and thyme. Add oil in a thin stream, whisking to blend.
- Season to taste with salt and pepper. Add potatoes and celery and toss to coat. Serve warm.
