Horseradish Cream

This simple sauce is excellent with roast beef. Save some for the sandwiches the next day!

• Yields: 1 3/4 cup

Ingredients

• 1 1⁄2 cups sour cream
• 1⁄4 cup  prepared  white horseradish
• 1⁄4 teaspoon salt
• 1⁄4 teaspoon fresh coarse ground black pepper
• 1⁄4 cup  snipped fresh chives

Directions

1. In small bowl, mix first 4 ingredients.
2. Chill.
3. Before serving, stir in the chives.
