Hormel Hash Pre-Game Egg Bake

Ingredients
- 4 large eggs, beaten
- 2 cups shredded monterey jack and cheddar cheese blend
- 3⁄4 cup small curd cottage cheese
- 1 (4 1/4ounce) can diced green chilies
- 1⁄4 cup chopped onion
- 1⁄4 cup chopped red bell pepper
- 1⁄3 cup fine dry breadcrumbs or 1⁄3 cup finely crushed buttery cracker
- 1 (15 ounce) can hormel corn beef hash
Directions
- Heat oven to 375ºF. Lightly grease 9x9-inch baking dish.
- In bowl, combine eggs, shredded cheese, cottage cheese, chiles, onion and bell pepper; mix well.
- In separate bowl, combine hash and 1 cup egg mixture. Stir in bread crumbs.
- Spread hash mixture in baking dish. Top with remaining egg mixture. Bake 35 to 40 minutes or until set. Serve with salsa, if desired.
