Hoosier Farm Fried Chicken

Ingredients

  • 1  cup water
  • 1  egg
  • 2  cups flour
  • 1  tablespoon  seasoning (Luv #520519)
  • 1 (4 lb)  whole chickens, cut into 8 pieces
  • 12 quart  oil, for frying, preferably lard

Directions

  1. Wash chicken, trim loose parts and fat off.
  2. In a medium size bowl, beat the egg with the water. Put flour into 1 gallon zip lock bag. Season the flour with the house seasoning. Dip the chicken in the egg, and then coat well in the flour mixture.
  3. Heat the oil to 350 degrees F in a deep pot or cast iron Dutch Oven. Do not fill the pot more than 1/2 full with oil. To save cook time, partially precook chicken in 350 F oven for 20 minutes before "wash & flour".
  4. Fry the chicken in the oil until brown and crisp. Dark meat takes longer then white meat. It should take dark meat about 13 to 14 minutes, white meat around 8 to 10 minutes.
