Ingredients
- 2 cups grated zucchini
- 3 eggs
- 1 cup honey
- 1⁄2 cup applesauce
- 1⁄2 cup olive oil
- 1 tablespoon vanilla
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1⁄4 teaspoon baking powder
- 1 tablespoon cinnamon
- 1 1⁄2 cups all-purpose flour
- 1 1⁄2 cups whole wheat flour
Directions
- Beat zucchini, eggs, honey, applesauce, oil, and vanilla until frothy.
- Add remaining ingredients and mix until blended.
- Grease and flour two bread pans.
- Pour batter evenly into the pans.
- Bake at 325 for 1 hour.
