Honey-Pecan Cheddar Bites

This is a tasty little appetizer which can be made up in 15 minutes. These can be made ahead of time; place on plate lined with plastic wrap, cover and refrigerate. Return to room temperature before serving.

Ingredients

• 8  ounces sharp cheddar cheese
• 1⁄2 cup honey
• 1  cup pecans, very finely chopped

Directions

1. Cut cheese into 36 cubes.
2. Insert a toothpick into each cube.
3. In a small saucepan, bring the honey to a boil and cook for 1 1/2 minutes.
4. Let cool slightly.
5. Dip each cheese cube into honey, then into pecans.
6. Serve warm with spiced cider, if desired.
