Honey Peanut Brittle

Excellent during the Christmas season for a great gift. But it is good any time of the year too.

Ingredients

• 2  cups honey
• 1⁄4 cup water
• 1 1⁄2 cups raw peanuts
• 1 1⁄2 tablespoons butter
• 2  teaspoons baking soda
• 1  teaspoon vanilla
• 1⁄8 teaspoon salt

Directions

1. Combine the honey and the water.
2. Boil until it reaches the hard crack stage.
3. Add the rest of the ingredients.
4. Pour into a greased cookie sheet.
5. Spread very thinly.
6. Let it harden.
7. Break into pieces.
8. Enjoy!
