Honey-Mustard Pork Tenderloins

Ingredients
- 2 1⁄2 lbs pork tenderloin
- 1⁄4 teaspoon salt
- 1⁄8 teaspoon pepper
- cooking spray
- 1 teaspoon olive oil
- 1⁄4 cup balsamic vinegar
- 1 teaspoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon chopped fresh rosemary
- lemon wedge (optional)
- rosemary sprig (optional)
Directions
- Preheat oven to 400.
- Trim fat from tenderloins, rub pork with salt pepper.
- Coast a large nonstick skillet with cooking spray; add oil and place over medium high heat until hot. Add pork, and cook 10 minutes, turning and browning on all sides.
- Place pork on a broiler pan coated with cooking spray. Combine balsamic vinegar, honey and Dijon mustard in a small bowl, and stir well with whisk. Brush vinegar mixture over pork. Insert a meat thermometer into thickest portion of 1 tenderloin.
- Bake tenderloin at 400 for 30 minutes or until thermometer registers 160, basting frequently with vinegar mixture.
- Place tenderloins on a serving platter, and sprinkle with chopped fresh rosemary. Garnish with lemon wedges and rosemary sprigs, if desired.
