Honey-Mustard Pork Tenderloins

  1. Preheat oven to 400.
  2. Trim fat from tenderloins, rub pork with salt pepper.
  3. Coast a large nonstick skillet with cooking spray; add oil and place over medium high heat until hot. Add pork, and cook 10 minutes, turning and browning on all sides.
  4. Place pork on a broiler pan coated with cooking spray. Combine balsamic vinegar, honey and Dijon mustard in a small bowl, and stir well with whisk. Brush vinegar mixture over pork. Insert a meat thermometer into thickest portion of 1 tenderloin.
  5. Bake tenderloin at 400 for 30 minutes or until thermometer registers 160, basting frequently with vinegar mixture.
  6. Place tenderloins on a serving platter, and sprinkle with chopped fresh rosemary. Garnish with lemon wedges and rosemary sprigs, if desired.
