Honey Dew Salad

Ingredients
- 2 large green onions, finely chopped
- 6 big potatoes, boiled/microwaved
- 3 big red and firm tomatoes, finely chopped
- 2 green apples, finely chopped (Preferably Granny Smith)
- 3 tablespoons fresh lemon juice
- 1 teaspoon salt
- 1 teaspoon black pepper
- 3 tablespoons soy sauce
- 2 tablespoons sesame seeds, freshly toasted
- 2 tablespoons honey
- 10 mint leaves (for garnishing)
- 2 tablespoons very hot water
Directions
- Take a deep salad bowl.
- Pour hot water and add fresh lemon juice, soy sauce, honey, salt and black pepper powder.
- Mix well and smooth.
- Add all the chopped ingredients to this mixture.
- Toss and mix gently.
- Sprinkle toasted sesame seeds and mint leaves.
- Mix and allow to stand for 1/2 hours at the room temperature.
- Yummy!
