Hominy Cheese Casserole

I love hominy, but many people these days don't seem to even know what it is, and often a lot of folks think they don't like it. Well, after they taste it served this way, there's a very good chance they'll change their minds. :)

• Serves: 4

Ingredients

• 16  ounces yellow hominy or 16  ounces white hominy, drained
• 1  can  condensed cream of mushroom soup
• 1  can Ro-Tel tomatoes
• 1 (3 ounce) can  of chopped green chilies
• 1 1⁄2 cups  grated cheddar cheese
• 2  slices  cooked bacon, crumbled (optional)
• 1⁄4-1⁄2 teaspoon ground cumin, to taste
• 1⁄2 cup  crushed  corn chips

Directions

1. Preheat oven to 350 degrees F.
2. Mix all ingredients except for the crushed corn chips.
3. Pour into a 2-quart casserole and cover with the crushed chips.
4. Bake at 350 degrees for 35 minutes.
