Homemade Vegetable Soup in Under 40 Minutes

  1. Add diced onion to an enameled heated pan with the olive oil already heated. Stir well over high heat. add the carrots and stir to combine, cooking about 2 minutes then add the celery and stir well, continue to brown the vegetables about 2 minutes then add the garlic and water, stirring well to deglaze the pan. When the water comes to a boil add the potatoes and stir well, drop in the bay leaves and cover while lowering the heat to medium. Check and stir about every 5 minutes to make sure the vegetables are not sticking to the sides of the pan. taste the broth and add salt, pepper and celery seed after about 20 minutes. Add the zucchini about 10 minutes before serving. Serve when the potatoes are to the doneness that you like -- for us that is about 40 minutes total cooking time!
  2. Easy additions are frozen corn, green beans, cream, chicken or you could substitute dried pasta, barley, or beans for the potatoes.
