Homemade V-8 Gazpacho

Ingredients
- 4 large tomatoes, peeled, seeded, & finely diced
- 1 green bell pepper, seeded & diced
- 46 ounces V8 vegetable juice, homemade (#116741)
- 1 large cucumber, peeled, seeded & diced
- 2 green chilies, seeded & diced
- 1⁄4 teaspoon red wine vinegar
- 1⁄4 teaspoon cumin, ground
Directions
- Stir all ingredients together. Chill.
- Ladle into bowls & pass the toppings!
- Here are some different ones to choose from:
- Sliced black olives.
- shredded sharp cheddar cheese.
- chopped green onions.
- avocado slices.
- croutons.
- sweet corn kernels.
- toasted pumpkin seeds.
