Homemade Spaghetti Sauce

Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 5 garlic cloves, minced
- 3 tablespoons italian seasoning
- 1⁄2 teaspoon crushed red pepper flakes

- 1 (28 ounce) can diced tomatoes
- 1 (6 ounce) can tomato paste
- 1⁄2 cup red wine or 1⁄2 cup white wine
- 2 teaspoons sugar
- 1 teaspoon salt
- 2 tomatoes, chopped
- 1 carrot, cut to 1/4-inch cubes
- 1⁄4 bell pepper, cut to 1/4-inch cubes
- 1 celery, cut to 1/4-inch cubes
- 1⁄2 zucchini or 1⁄2 squash, cut to 1/4-inch cubes
Directions
- Heat oil in a large stock pot over medium high heat.
- Add onion, garlic, italian seasoning, red pepper flakes and pepper saute for 4 minutes.
- Add tomato paste and stir for 3 minutes.
- Add all other ingredents except salt.
- Simmer over medium heat for 2 to 3 hours.
- Add salt just before serving.
- Water can be added to thin the sauce.
- Hamburger can be added to the finished sauce (1 1/2 lbs.) if wanted.
