Holiday Pumpkin Bars

These bars are a nice alternative to the traditional pumpkin pie.

  1. Crust.
  2. Mix flour, brown sugar and 1/4 cup sugar in food processor or medium bowl.
  3. Pulse in or using pastry blender, cut in margarine until mixture resembles coarse crumbs.
  4. Add in oats and pecans.
  5. Reserve 1 cup of this mixture and press remaining into a 9x13" pan.
  6. Bake crust for 12 mins at 350 degrees.
  7. Filling.
  8. Beat cream cheese, 1/2 cup sugar, eggs, pumpkin, and spices until well blended.
  9. Pour over crust and sprinkle with reserved crumb mixture.
  10. Bake 20 -25 minutes at 350.
